Try Luminotes. It's a WYSIWYG personal wiki with a focus on simplicity and ridiculously quick linking. It doesn't have folder support per se, but it does have an autogenerated "note tree" and support for distinct wiki notebooks. I apologize in advance for the lack of Safari support.
